The material The blades on all WMF household knives are of a high-quality hardened special blade steel; 15% chromium-molybdenum-vanadium steel. This material ensures exceptional sharpness, elasticity, corrosion resistance and long-lasting edge reten- tion. All WMF knives are stainless, acid resistant, and will not rust even if exposed to moisture.

Performance Cut – Sharper for longer Innovative hardening process

The precisely steered and unique temperature curve achieved in our special oven leads to an extremely hard blade steel structure, which is the basis for optimum grinding at a sharper angle. Precise laser-controlled robot grinding Every cutting edge is laser measured to determine the ideal cutting angle. The knife is then processed by precise robot grinding technol- ogy for consistent and quality results. Special pointed cutting angle Both sides of the blade are precisely grinded to an exact and perfectly executed cutting angle. This special angle guarantees an outstanding and long-lasting sharpness, which exceeds the DIN Norm ISO 8442-5 by more than the double.

The alloy of this special blade steel is permanently etched on each blade.

Additional quality features Seamless finish

The balance With forged knives, the relationship between blade and handle is balanced. Ergonomic handles fit the natural shape of your hand and make working with the knives easier. The blade profile The blade tapers evenly from the back to the cutting edge and from the bolster to the tip. This creates a precise edge, which is set using state-of-the-art equipment. The cutting edge is stable, remains sharp over long periods and is easy to sharpen.

There is no discernible transition between the blade, bolster and handle. That is important, especially with respect to hygiene.

The forged steel bolster It prevents the finger from sliding off the handle and onto the blade so it functions like a finger shield. This means that the hand retains a firm grip and can work with the knife safely and effortlessly. The handles They are made of Cromargan® or a high-quality plastic, which offers optimum hygiene and increased resistance to impact compared to wooden handles.

The workmanship – made in Germany The sharpness and quality of a knife isn’t just a question of what material it’s made of. The forging makes the difference. WMF operates one of Germany’s largest blade forges in Hayingen, Baden-Württemberg. Unlike all the other big manufacturers, WMF continues to use traditional forging processes. In its own forge, the blades, which are made of special hardened blade steel, are treated along their whole length with a forging hammer, sharpened multiple times and polished until they have a perfectly smooth surface.

Maintenance and storage tips Maintenance

Storage High-quality knives deserve to be handled with care. When in the knife block, the blades are protected, they can be seen at a glance and are always at your fingertips. The WMF range includes decorative knife blocks in various materials.

Blades should be rinsed under running water and then dried after each use. We recommend hand-washing to protect the high-quality blades against any mechanical damage. Sharp blades are sensitive. Wood, bamboo or high-quality plastic are the preferred materials for chopping boards. The gentle surface pro- tects the blades and provides the ideal base for cutting, chopping and mincing. Boards made of glass, marble, porcelain, ceramic or other materials are unsuitable as they will dull the blade.
