Almost everybody in Germany is familiar with the WMF brand. WMF products stand for top quality, sophisticated functionality and time- lessly beautiful design. Over the course of more than 160 years, the small workshop in Geislingen an der Steige has developed into an international com- pany, which has succeeded in revitalising the marketplace with its innovative products time and time again.

The basis of this success has always been the workmanship, an experi- enced workforce and high-quality production technology. Right from the very start, WMF has placed a particularly high value on design. Today the internal product development team works with well-known designers from all over the world. Together, they conduct research into current trends and develop product ideas that fit the times. Get out your ingredients. Take the knife and start cutting. Each cut has its own distinct sound. Onions crunch, peppers crack, parsley rustles. Carve your roasts into wafer-thin slices and savour the sensation of the blade cutting through meat as if it were butter. Each type of food is different in terms of size, surface and consist- ency and should be treated in its own individual way. This is why there are specially designed knives, which have exactly the right shape, length and edge for their job.

A tomato is smooth on the outside and soft on the inside; bread has a hard crust; meat has fibres. There are special blades for every type of surface which retain the structure, appearance and taste of the food.

Smooth-edged knives lose their sharpness with use. A high quality knife can and should be sharpened on a regular basis. This also ap- plies for knives with Performance Cut, which can also be sharpened with all conventional knife sharpeners. Once the knife is blunt, WMF Service can set a new cutting edge. Sharpening steels The classic steel consists of an extra-tough chromium-vanadium steel. It is magnetic and thus keeps the metal shavings from falling. The shape of the finger shield prevents the risk of injury and the steel from rolling when set down. When sharpening a knife, it should be pulled over the sharpening steel from the tip to the handle using light pressure and at an angle corresponding to roughly half a thumb’s width. Both sides of the blade must be pulled through multiple times and equally along their entire length. In the case of the diamond sharpening steel, the stainless steel core has a diamond coating. The extremely fine grain is very hard-wearing and ensures a smooth sharp blade and long-lasting sharpness. The oval shape provides a broad base for the blade, ensuring optimum honing. Unlike the ceramic knife sharpener, the diamond sharpening steel is unbreakable.

Blade tip

There are four different basic types of knife.

Smooth-edged blade This is suitable for cutting just about everything, whether the food is hard like a pumpkin or soft like a banana, be it meat, fruit or vegeta- bles. It gives a smooth, clean cut, without tearing food. The smooth blade is also used for peeling.

Edge/facet

Centre tip Both back and cutting edge are slightly curved and taper sharply together. An example of this is a carving knife. The accentuated point is very well suited to larding or separating tendons. Rocking cutting movements are harder to perform.

Serrated-edge blade Typical for bread knives. The serrated edge cuts through the crust and slices the soft interior. It is very good for bread, bacon rinds and fruits with hard skin – it is not suitable for meat because the fibres would tear.

High tip The back of the blade is straight and the cutting edge is curved. An example of this is a utility knife. The blade can roll easily and is ideal for rocking cutting movements.

Blade logo

Double-serrated blade The WMF double-serrated blade is unique and patented. The blade is serrated on both sides. This means it can be pulled straight through food without slipping. Foods such as bread, vegetables, onions, salami and even frozen food can be cut evenly and precisely.

Low tip The back of the blade is curved and the edge of the blade is straight, right to the tip. A typical example of this is the vegetable knife. Rocking movements are not possible because of the straight cutting edge. However, it is well suited for chopping.

Knife sharpener Not everybody knows how to handle the steel. A knife sharpener is a good alternative for the untrained user. The knife sharpener with ceramic discs has two levels for pre-grinding and honing. The knife should be pulled through the sharpener several times while maintain- ing an even pressure in order to achieve a precise cutting angle. The sharpening inserts of the professional knife sharpener are made of extremely hard special steel. This ensures that material can be re- moved precisely and powerfully and thus achieve an optimum result.

Bolster

Chinese knife blade The blade is rectangular with a slightly curved cutting edge in the middle. Thanks to this slight curvature, the blade can be used not only for chopping but also for mincing. The large surface of the blade also makes the knife ideal for sliding cut ingredients into a pot or wok.

Knife handle

The whetstone For extremely hard blade steel, such as with Damasteel knives, we recommend a whetstone. Before each use, it needs to be soaked in water for five to ten minutes. The blue side with the course grain (360) is used to restore the cutting angle. The white side with the fine grain (1000) is used to polish the blade to ensure long-lasting sharpness.

The material The blades on all WMF household knives are of a high-quality hardened special blade steel; 15% chromium-molybdenum-vanadium steel. This material ensures exceptional sharpness, elasticity, corrosion resistance and long-lasting edge reten- tion. All WMF knives are stainless, acid resistant, and will not rust even if exposed to moisture.

Performance Cut – Sharper for longer Innovative hardening process

The precisely steered and unique temperature curve achieved in our special oven leads to an extremely hard blade steel structure, which is the basis for optimum grinding at a sharper angle. Precise laser-controlled robot grinding Every cutting edge is laser measured to determine the ideal cutting angle. The knife is then processed by precise robot grinding technol- ogy for consistent and quality results. Special pointed cutting angle Both sides of the blade are precisely grinded to an exact and perfectly executed cutting angle. This special angle guarantees an outstanding and long-lasting sharpness, which exceeds the DIN Norm ISO 8442-5 by more than the double.

Additional quality features Seamless finish

The balance With forged knives, the relationship between blade and handle is balanced. Ergonomic handles fit the natural shape of your hand and make working with the knives easier. The blade profile The blade tapers evenly from the back to the cutting edge and from the bolster to the tip. This creates a precise edge, which is set using state-of-the-art equipment. The cutting edge is stable, remains sharp over long periods and is easy to sharpen.

There is no discernible transition between the blade, bolster and handle. That is important, especially with respect to hygiene.

The forged steel bolster It prevents the finger from sliding off the handle and onto the blade so it functions like a finger shield. This means that the hand retains a firm grip and can work with the knife safely and effortlessly. The handles They are made of Cromargan® or a high-quality plastic, which offers optimum hygiene and increased resistance to impact compared to wooden handles.

The workmanship – made in Germany The sharpness and quality of a knife isn’t just a question of what material it’s made of. The forging makes the difference. WMF operates one of Germany’s largest blade forges in Hayingen, Baden-Württemberg. Unlike all the other big manufacturers, WMF continues to use traditional forging processes. In its own forge, the blades, which are made of special hardened blade steel, are treated along their whole length with a forging hammer, sharpened multiple times and polished until they have a perfectly smooth surface.

Maintenance and storage tips Maintenance

Storage High-quality knives deserve to be handled with care. When in the knife block, the blades are protected, they can be seen at a glance and are always at your fingertips. The WMF range includes decorative knife blocks in various materials.

Blades should be rinsed under running water and then dried after each use. We recommend hand-washing to protect the high-quality blades against any mechanical damage. Sharp blades are sensitive. Wood, bamboo or high-quality plastic are the preferred materials for chopping boards. The gentle surface pro- tects the blades and provides the ideal base for cutting, chopping and mincing. Boards made of glass, marble, porcelain, ceramic or other materials are unsuitable as they will dull the blade.

Basic Vinegar / Oil sprayer Balsamico bianco vinegar, argan or walnut oil, there is a wide range of types of vinegar and cooking oil available. Often just a touch is all you need to give antipasti, meat or pasta dishes that special flavour. A sprayer is perfect for this. It spreads the liquid very finely and evenly and is extremely economical in use. The sprayer has a clear, functional design, which also looks good at the table and can be combined in a multitude of ways. The screw thread is easy to open. The wide opening makes refilling the sprayer easy. Glass containers, sprayer and lids are easy to clean and dishwasher-safe.

Herb garden Herbs give your meals that extra something, especially when you’ve picked them yourself. This also works on the windowsill because in order to grow all plants need is a good location and some water. The herb garden watering system helps with accurate measuring. The plants use as much water as they need via the glass fibre wick. At normal room temperature, the water reserves in the tank are enough for several days.

The water tank is cleaned with warm water and a mild detergent. Pots made of Cromargan® can be cleaned in the dishwasher.

Basic Vinegar / Oil pourer To make sure that not a drop of oil or vinegar is wasted, the Basic Vinegar / Oil pourer use a vacuum. To fill, remove the lid from the glass container and then replace and tighten. Simply tip gently to re- lease the required amount of vinegar or oil – at the table over a plate or salad bowl. To stop the flow, place your thumb on the upper edge of the opening. After disassembling, all parts can be cleaned in the dishwasher.

Salad dressing shaker Dressing shakers are ideal kitchen gadgets that transform oil, vinegar and herbs into creamy salad dressings. All the ingredi- ents are mixed into a sauce with a creamy consistency. You can serve the dressing at the table, pour it over your salad immediately or take it to the office in the shaker. Saucepan The small pot with long handle is particularly practical and versatile. Ideal for tossing and stirring food on the hob. The handle is useful for emptying the contents and pouring off liquid.

If you enjoy cooking regularly, you need different pots in different sizes. The choice and assortment is determined by the size of the household and personal preferences. The material WMF cookware items are made of Cromargan®: stainless steel 18/10, the material with the best usage and care properties. This high-quality stainless steel has a neutral taste and odour and is resistant to food acids. Cromargan® is scratch and impact resistant and remains durable even with intensive use. Pots made of Cromargan®: stainless steel 18/10 can be easily cleaned in the dishwasher. The base The most important thing for a good pot is its heat performance. WMF pots have a TransTherm® universal base. This consists of a strong aluminium core which is encapsulated in chrome steel. Aluminium absorbs heat quickly and distributes it evenly. The chrome steel capsule protects the aluminium core against aggressive detergents and no food residue can stick to the outside of the pot. This makes it easy to clean. The TransTherm® universal base is suitable for all modern energy sources – even for induction hobs because the chrome steel used to encapsulate the aluminium core is magnetic. The diameters of the pot and hob should be largely consistent to ensure the optimum use of energy. Pots with TransTherm® universal bases use less energy The base is cambered during the production process, which means it is curved slightly inwards to prevent it from deforming with high temperature differences. This ensures the pot remains firmly on the hob and no energy is lost. How much heat is absorbed and retained depends on the strength of the pot’s base. The TransTherm® universal base is the ideal strength for the perfect balance between heat absorption and heat conduction. The stored residual heat keeps food warm longer.

Low casserole A shallow pot, ideal for braising. After browning, liquid is added to the meat, which then cooks slowly in the closed pan at a low temper- ature, either on the hob or in the oven.

Steaming insert The perforated insert fits in the high casserole with the same diame- ter. Liquid is brought to a boil in the pot. Vegetables, fish or poultry cook gently in the rising steam in the insert.

High casserole A medium-high pot for larger quantities with lots of liquid. Particu- larly suitable for blanching large vegetables such as cauliflower or broccoli. Also suitable for meat or vegetable stews.

Sauté pan A small pan with a long handle and high edge at an oblique angle. The name comes from the French word “sauter”, which means to sear briefly, and this describes the function of the pan. Strips of meat or vegetables, or even apple slices, are briefly tossed in butter in the sauté pan. The shape of the pan is also well suited to caramelising and reducing liquids.

Stock pot A tall pot for large quantities. Ideal for preparing meat, poultry and vegetable stock as well as soups, stews, spaghetti and dumplings.

Aroma steamer Perfect for vitamin and nutrient-friendly steaming, including for larger foods such as fish or asparagus.

The pouring rim All items of WMF cookware have a pro- nounced pouring rim. The outwardly-turned edge ensures accurate and controlled pouring of liquid, without so much as a drip.

The inside scale and traceability code No more need for measuring jugs: the scale on the inside of the pot makes it easy to measure liquids (for addition or removal). The unique traceability code enables the prod- uct’s history to be tracked from start to fin- ish, including when and where it was produced, finished, stored and transported, and by whom.

The handles Handles made of Cromargan®: stainless steel 18/10 look great and are also durable, oven- proof and dishwasher-safe. Handles on WMF items are spot-welded and an integral part of the pot. The high-quality construction also means that no water can seep between the pot and handle.

WMF has three different handle designs: Ergonomic handles

are solid and can heat up during extended periods of cooking. The quantity and type of food being cooked in the pot, the cooking time and a person’s individual sensitivity to heat will ultimately determine how warm the handles feel.

Hollow handles are hollow inside and do not become hot during normal use on the hob because the heat is distributed over a large area by means of the welding spots on the pot. Pot holders must be used after extended cooking periods.

Handles with patented Cool+ Technology never heat up, even after long cooking times. With this innovative joining technology, the transfer of heat from pot to handle is reduced effectively and the requirements of the EN 12983-1 standard are even exceeded. Cool+ handles are easy to recognise by their bright red dots.

As a general rule, pot holders should be used when cooking in the oven or for prolonged peri- ods of time.

Maintenance and storage tips Thanks to the excellent heat performance of WMF pots and pans made of Cromargan®: stain- less steel 18/10, you can save energy when cooking. Only use the highest setting on the stove for parboiling and then you can use a lower heat setting to finish cooking. This particularly applies when cooking with little water. You get the most efficient use of energy when the size of the pot matches the size of the hob. Only add salt to water that is already boiling and stir well. Otherwise, salt could settle on the base of the pot and corrode the material. Clean the pots and pans as soon as possible after use and store in a dry place. Stubborn food residue should be soaked and gently removed with a sponge or brush. Do not use any abrasive scouring agents or steel wool. Hard water and certain types of food can result in limescale deposits or blue shimmering dis- colouration inside the pans. Both can be easily removed using Purargan® polish or vinegar water. This ensures that the pots will retain their flawless appearance for a long time.
